Simple Tomato Basil Soup



Prep Time: 8 minutes. Cook Time: 20 minutes. Serves: 8-10


4 cups vegetable broth
2, 28oz cans diced organic tomatoes
1 large fresh tomato, diced
1 1/4 cups canned, full-fat coconut milk
12-15 leaves fresh basil, chopped
1 scant tsp pepper
1/2 tsp salt
1/2 tsp onion powder


Combine all eight ingredients in a large pot on the stove.

Cook over medium heat until the soup begins to boil.

Remove the pot from heat and puree all contents using an immersion blender or traditional blender.

Return pot to the stove, cover and bring to a boil.  Simmer about 20 minutes.

Salt and pepper to taste, garnish with fresh basil if desired.
